If I add a chat to the wrong list, how do I remove it?

Right-click the chat in the chat list and select Change list.

If I archive chats in Volt, does it affect WhatsApp on my phone?

Yes. Volt archived chats are linked to WhatsApp mobile. Archiving a chat in Volt will archive it on your phone, and vice versa.
